SOUR EGGPLANT

SOUR EGGPLANT
INGREDIENTS:- 
Egg plant = 1 kg 
yellow paste = 2 tea spoon
chilli paste = 1 tea spoon
cumin paste = 1 tea spoon
Corenda paste = 2 table spoon
Garlic paste = 1 tea spoon
Onion paste = 1 table spoon
Sugar = 1/2 cup
Oil = 1/2 cup
Salt =as much as you need
Tamarind = 1/4 cup

PROCESS:- Cut your eggplant into round shape and mix it with all spices and fry it in little oil lightly.
In a preheated pan, heat the oils . Add all the spices and stir it constantly for 2 minutes. Add one cup of water,a pinch of salt, tamarind,sugar and cook it for 2 minutes. Add  fried  eggplant and cover it with a lid, cook it in light heat . when then water dried up. serve immediately.
